Menu Plan Monday









This is my first time participating in Menu Plan Mondays. It's my first day blogging, for heaven's sake! I'm going to go easy on myself and just include dinners.

Monday - Chinese chicken and rice

Tuesday - Pancakes and sausage

Wednesday - Chili with Fritos

Thursday - Roast chicken, Make-ahead mashed potatoes

Friday - Taco salad with homemade salsa

Saturday - Sandwiches

Sunday - Pork roast

    How do you make your salsa, because I haven't found any recipes I like yet.

  2. Hi, Ezzy. Thanks for the welcome. I hate to say that I don't have a specific recipe for my salsa. I use Roma tomatoes (about 4 or 5), half a green pepper, 2 or 3 green onions, cilantro, salt, garlic and lime juice. Sometimes I add a jalapeno for a little kick. I dice everything small, then add the spices and lime juice. I taste as I go, adding a little of this or that. Then I let it blend in the fridge for a few hours. Hope that helps.
