Last week was so much fun! We had friends visiting from Iowa, so lots of laughs and food were shared. While they were in town, we held Thanksgiving in August, complete with roast turkey, dressing (2 kinds!), mashed potatoes and pecan pie. And several other side dishes, too. It was kinda weird to have the house smelling like Thanksgiving in the summer time, though.
This week will be our last before we start back to school. I'll be busy preparing the school room and getting organized. And I'm hoping to get some freezer meals made so we can have some easy lunches as we get back into our routine.
I'll be participating in the 5th Annual Not Back to School blog hop, so come back and check out what curriculum we'll be using.
Now on to this week's menu:
Monday
Beefy Spanish rice, crockpot refried beans
Tuesday
Herb crusted tilapia, oven roasted cabbage
Wednesday
Quinoa burrito bowls (recipe to come this week)
Thursday
Date night - kids will have pizza sloppy joes
Friday
Chicken bacon subs, fries
Saturday
Grilled steak, balsamic roasted carrots
Sunday
Chicken chili, biscuits

I just found your blog on 'I'm an organizing Junkie' blog and your recipe for Beefy Spanish Rice, crockpot refried beans sure did catch my eye. I'm always looking for a new recipe and this one sounds and looks great.
