I hope everyone had a lovely Easter! I enjoyed a quiet day with my family which ended with the film "Courageous" shown at my church. It was a touching, inspirational film that was a great picture of grace.
This week seems like it will be a quiet one, but saying that probably invites additional busyness, doesn't it? LOL. One thing that helps me stay calm even through the craziness of day to day life is having a menu plan for the week. I make a grocery list based on the plan, so it's reassuring to know I have the ingredients on hand to make several meals. I won't have to scramble through the cupboards and throw something together.
So here's the plan for the week:
Monday
Chicken shawarma, flatbread
Tuesday
Ham and bean soup (using leftover Easter ham), homemade bread
Wednesday
Tasty tilapia, broccoli and cauliflower mix
Thursday
Ham and broccoli quiche (another use of leftover ham), roasted carrots
Friday
Greek chicken pasta, green beans
Saturday
West Virginia pepperoni rolls
Sunday
Out to eat
